Greek Salad

This salad is speaks summer on so many levels. Fresh herbs, tomatoes and cukes perfectly in season, a light dressing and tangy feta. Put this on your menu ASAP.

For the dressing, whisk together:

1/4 c red wine vinegar
1 tbsp. fresh oregano
1/4 c olive oil
1/2 tsp sea salt
1/2 tsp ground black pepper
2 cloves minced garlic

For the salad:

fresh salad greens
cucumber
tomato
red onion
kalamata olives
crumbled feta cheese

Makes enough for 4 perfect salads. Serve as a side, or do it as a main served with crusty bread or topped with your protein of choice.
