Cinnamon Flax Cakes

Inspired by a strong need to eliminate gluten, coupled by a strong desire for pancakes.  Perfect topped with avocado and greens for a savory twist, or the traditional real maple syrup & fruit route.

What You'll Need:

2 Tbsp coconut oil

1/3 c ground flax

1/2 tsp baking powder

1/2 tsp cinnamon

dash sea salt

2 Tbsp water

2 eggs

Melt coconut oil in a small frying pan over med-high heat.  Pour into small ceramic bowl with remaining ingredients.  Whisk together well.  

Pour 1/2 batter back into greased pan.  Cook until it begins to evenly bubble, flip and cook for an additional minute or so.  Repeat with remaining batter.

You'll enjoy these.  A lot.


Makes 2 perfect cakes.
