Oriental Salad

Such an easy, fresh and DELICIOUS twist on a green salad. A spin off my mom's original recipe. 

1 head green or purple lettuce, torn
3-4 bunches green onion, chopped
handful almonds
2 tbsp. poppy seeds
1 can mandarin oranges (in juice), rinsed and drained (fresh clementines work, too!)

1/2 c olive oil
4 tbsp. white vinegar
1/2 tsp black pepper
healthy squeeze honey
**This will yield more dressing than you need for one salad. Store in a jar and save for later!

We eat this salad as is, sometimes adding chow mein noodles. Carnivorous? Add chicken!
