A tip from my dear friend Lisa. Simple and delicious. And, on a most days, a toddler win.
What you'll need:
1 c lentils
3 cloves garlic, minced
3-4 oz feta cheese, crumbled
1/8 c olive oil
Cracked black pepper
Cook lentils in salted, boiling water until tender. (about 20 minutes).
Drain and rinse lentils with cool water. Transfer to a serving bowl, and mix with remaining ingredients.
Serves 6. Perfect to keep in the fridge for lunches or sides during the week.
